Remembering September 11th ...

Today marks 10 years since the 9/11 World Trade Center attack.  I was at the doctors when the first plane hit and I recall my initial confusion over the what was happened, as when the receptionists stated a plane crashed into the tower to no one in particular, I stood silent, took a seat, and then looked towards the front desk and stated, "wait, you mean on purpose?".  Unable to wrap my head around this seemingly senseless tragedy, the days following the initial attacks are a somewhat of a blur, despite being fortunate in terms of not having lost any friends/loved ones.  Aside from sending thoughts and prayers to those who did lose friends, coworkers, and/or loved ones,  I had no intention on blogging today as I feel the contents of my post is of no real relevance in comparison to what this day is and means for most, if not all of us.  Then, at 6:45am, no longer tied up (heh) and able to interact with the world, I turned my phone back on.  My message alert sounded: a text message, from Senseless*, sent at 1:4something am likely in response to something of no true relevance 12+ hrs earlier.  Ummm, seriously?!  I felt annoyed by this individual's intentional responding to only that which is of little to no relevance, when in reality there was subject matter of actual meaning that could have been responded to instead.  Bring now meaning to the word irrelevant and serving as nothing more than a waste of my time, I replied to this person, saying not to bother replying further due to it being pointless.

With a coffee in my hand (my first in several months) and half of the herd at my side, I noted the irony in the above insignificance and decided to run with it. It was way too early for this fuckery, and in an attempt to shake the peeved feelings,  I began to type.  Half way through, I paused to get breakfast (a protein bar from the refridgerator) and upon completion of both my bar and my vent session, I actively decided to go with the flow in terms of what the day brings,  thus resulting in this blog post.  As the saying goes: you can't make sense of the senseless....

The recipe below is for a batch of protein bites that I made yesterday evening.  However, I've made several variations of these bars in the past using different combinations of seeds and/or nuts but this one is by far my favorite.  They take 20 minutes or so to make and taste leaps and bounds better than your typical store bought variety so do your taste buds (and your body) a favor and give a homemade version a go!

3/4 cup raw pepitas
3/4 cup hempseeds, hulled
1/2 cup ground flax seed
1/2 cup shredded organic coconut, unsweetened
1/2 cup sunflower seed butter
1/3 cup coconut oil, melted
2 Tbsp coconut nectar (or raw honey)
4 Tbs chia seeds
2 teaspoons pure vanilla extract

4 - 5 chunks/square chocolate (I use Trader Joes 72% Cacao)

In a food processor, grind pepitas, hempseeds, flax (if not ground),  chia and coconut until it becomes a coarse meal.  Transfer to a bowl and stir in the remaining ingredients (except the chocolate) until everything is well combined.  Press mixture into an 8 x 8 pan and place in refrigerator to chill. 

Meanwhile, melt chocolate.  When it's ready, remove pan from fridge and spread an even layer on top of the bars.  Cover and return to refridgerator to set.   When the chocolate hardens, cut into squares.  Store in airtight container in the fridge.
