The last two days have been rather miserable. I haven't cooked due to not having much food and as you know I didnt have food due to the refridgerator breaking down. Adding insult to injury the little food I did have got intentionallly thrown out by an individual residing under the same roof, whom I dont particularly care for. Apparently even in fridgeless times my food items cannot be iin her freezer. To be in your forties and engage in this kind of ridiculous behavior speaks for itself so I'm not gonna waste my energy via typing more about it
Moving on:
I've been browsing appliances the last few days, specifically looking for a larger crockpot (I have a 2 qt) and a new food processor. I am also in the market for a yogurt cheese maker, which I found for a reasonable price on amazon. IIn terms of the crockpot, I was torn between the 4 qt and the 6 qt but then discovered that they have 5 qt so I'm now leaning towards that size. Decisions, decisions! Size aside, I definately want one that is programmable (my 2 qt is not) but will likely shop around a bit in an attempt to score one extra cheap. Money is tight these days and since I do have the 2 qt I don't consider it need as it's in perfect condition and does exactly what I need it to do when I use it, which is mainly for desserts.. However, I think that is about to change as the search itself has inspired me to get something slow cookin' As I type away I have about an hour to go before my Sweet Potatoe & Apples are ready. Mmmmmm! I also have bread laying out to dry for a Crockpot Stuffing.
For tomorrow's lunch, I whipped up Fiesta Lime Roasted Veggies and I also made Cinna-Nilla CousCous Pudding to bring to work tomorrow and share with my hardworking and dedicated service team employees, Jessica & Irvsher.

6 cups broccoli & califlower florets
2 cups tomatoes, diced
1/4 cup olive oil
3 cloves garlic, minced
1 tsp Mrs Dash Extra Spicy
1 tsp Mrs Dash Fiesta Lime
1/2 tsp sea salt
1/2 tsp Cayenne
Fresh Ground Pepper, to taste
Preheat oven to 450F. Combine all ingredients and pour into baking dish. Roast for approximately 25 minutes. Enjoy!

1 cup plain CousCous
3 cups Silk Pure Almond Original Unsweetened Milk
1 tsp coconut oil
1/3 cup dried currants
1/4 cup dark brown sugar (not packed)
1 tbs Trader Joes Vanilla Bourbon Extract
Fresh Ground Cinnamon, to taste
In a medium sauce pan, combine almond milk, sugar, currants, and coconut oil and bring to a boil, stirring ocassionally. Remove from heat and add couscous and vanilla. Mix well and cover. Let stand 5 minutes. Sprinkle with cinnamon prior to serving. This puddiing can be eaten hot or cold, for breakfast or dessert!
